I have a parts Jetta in my driveway right now with a sweet black interior and power windows. Does anyone know if it's at all possible to take the required parts from that car and use them in mine? Or is it going to be a major pain in the arse?

What kind of car do you have? If it's a mk2 it's pretty simple

While we're on the topic, how difficult is it to put an aftermarket kit into a MK3 jetta?

You can only do it if the generations match.
All the mark 2's 1985-1992 will interchange.
All the mark 3's 1993-1999 will interchange.
Even if your car does not have power windows there are provisions to mount the power equipment in the doors and will fit in just fine.
