OK, I get it running again and it runs very rich when the O2 sensor is plugged it, so I just unplug it for now, drive it around a bit, seems to run fine, get it plated and insured and now the damn POS won't even get out of the driveway without stalling. It will idle ok and will rev up ok but it's the transition, give it any gas or load to the engine and it just stalls. I am truely ready to junk this thing.
I think I'm going to start calling around some local junk yards to try to locate a diesel for it, sure it won't have any power but atleast it should get me to work and back every day.

Dude, relax... Check the connections to your MAF... Also make sure the oxygen sensor is installed right... If it's out of spec, the ECU will revert to a super rich mixture, and will cause problems like this... Let me ask.... how did you connect the o2 sensor to the harness?
You need to atleast find a 1.6L TD or a 1.9L or 1.9L TD if you plan on putting it in your van. 50hp in a van is dangerously slow. It would probably take a good 60-100 seconds to get up to 60mph.

No splices in the sensor, I spent a little extra to get a sensor that just plugs in to the harness. I've had to replace the OXS at least 3 times in 10,000 miles, I don't know what the hell is going on with them. Right now it's unplugged, it's extreamly rich with it plugged in, but with it unplugged, it's acting very lean, usually it runs ok with no OXS. I have checked all connections to all sensors including the MAF. I do have a modified MAF I might throw in to see what happens I also have a spare ECU I'll try. I also checked for vacuum leaks.
The original Westy diesel was the 50hp 1.5 na, they might be slow but they were one of the more reliable H2O Vanagons. I do plan on looking for a TD.

What is the rated hp of the 1.6TD, 1.9NA, and 1.9TD?
I haven't had a chance yet to call around, but I plan on doing it today.

Couldnt find any data on the 1.9L NA... Probably really hard to find.

Ok, I finally found my fuel pressure guage and I'm getting a wopping 20psi and residual pressure after 10 seconds is 0psi, a far cry from 36psi and 29psi after 10 minutes. I get the same results directly at the pump with no regulator so it's the pump. The damn thing worked fine before I put the van away. Pumps sure arn't cheap either, 159 and up, and it's not easy to find used VW parts around here.
